Looking for a healthy alternative to a standard Schnitty?

There are a few things you should know about this recipe….

  1. It’s seriously simple
  2. It’s super delicious
  3. We’ve made a few traditional substitutions for a strange counterpart….
Aquafaba…..🤷‍♀️
What is Aquafaba you ask… Well, it’s the juice from a can of chickpeas… yep that slimy stuff you normally throw down the sink… It works just the same as eggwhites… and roumor has it, it’s pretty trendy these days! #vegantreat

 

INGREDIENTS:

  • 4 large flat mushrooms
  • Panko bread crumbs
  • Aquafaba (the liquid from the chickpeas, remember)
  • Salt and pepper
  • Fresh thyme

Okay, so you’ve got it, you need chickpeas, bread crumbs and some mushrooms… But don’t chuck the chickpeas, next week I will show you how to make the best hummus EVER 👌

METHOD:

  1. Preheat your oven to 180c
  2. Take the stalk out of the Mushrooms but no need to peel it
  3. Gently whip your aquafaba up in a small bowl using an electric beater or a whisk
  4. Mix a pinch of salt, pepper, and fresh thyme into your breadcrumbs
  5. Coat your mushrooms in the aquafaba and then with the breadcrumbs, make sure the crumbs cover the mushrooms nice and evenly
  6. Place onto a lined baking tray, drizzel with a little oil and bake for 20min until golden and just soft
Serve on a burger (with delicious things like cheese…maybe blue, rocket, balsamic mmm) in place of your normal schnitty or as a main with a yummy salad and condiments (we love garlic aioli and pickles).
